THE STANDARD

Taste: Lemon, Malty Sweetness, Bread
Notes: Classic Czech pale lager, brewed with floor-malted Pils malt and Sterling hops. Double decoction, open fermentation, and extended lagering time bring a bit of Plzen to Brighton and Salem.

Czech Amber Lager || 4.2% || Czech Mug || 11° P
Taste: Toast, Caramel, bread
Notes: Polotmavy is Czech for “half-dark,” this 11° Plato Czech Amber Lager is brewed with Czech floor malted pils Vienna and Munich malts for notes of toast, caramel and bread. Czech Sladek hops balance out the malt and provide a spicy finish. This beer also undergoes a unique mashing schedule known as an enhanced double decoction for a more complex malt flavor. Open fermented, naturally carbonated, lagered forever

Czech Dark Lager || 4.5% || Czech Mug || 12° P
Taste: Sweet Dried Fruit, Toasted Dark Bread, Dry Finish
Notes: Tmavy is Czech for "dark". Double decocted, open fermented, naturally carbonated, lagered forever.
GERMAN & aUSTRIAN BIER
KÖLSCH
Cologne-style Kölsch || 4.5% || Willi Becher
Taste: Bread, Fruit, Biscuit
Notes: Medium in body with a soft mouthfeel and a straw yellow or pale gold color, Kölsch has a spicy, herbal Noble hop bitterness that is medium to slightly assertive—less than a Pilsner, but not by much. A somewhat fruity or vinous (grape-y from malts) quality and a crisp, dryish finish make up the rest of the flavor profile.

SOMMER KELLERBIER
Frranconian Pale Lager || 4.6% || Willi Becher
Taste: Lemon, Dry, Bitter
Notes: Inspired by the kellerbier of the Spezial Brewery in Franconia Germany. This beer displays a nice balance of malt breadiness and hop bite. Notes of lemon and citrus, light body, and an assertive bitterness for enhanced drinkability.

Berliner Weisse (Sour Wheat) || 3.5% || 14oz Willi Becher
Taste: Tart, Lemon, Dry
Notes: Now rarely seen as fruited sours have taken over in the US, the classic Berliner Weisse is low in alcohol, refreshingly tart, and served with woodruff or raspberry syrups. The Berliner Weisse presents a harmony between yeast and lactic acid. These beers are very pale in color, and may be cloudy as they are often unfiltered. Carbonation is very high, adding to the refreshment factor this style delivers.

Notes: Classic Bavarian wheat beer and one of the most technically challenging beers we make. Open fermented for maximum aroma and flavor, with clove and banana aromas formed from the unique Bavarian yeast.
DUNKEL WEIZEN
Bavarian Dark Wheat Bier || 5.2% || Weisse Glass
Taste: Bread Pudding, Clove, Caramelized Banana
Notes: Caramelized banana flavors and strong clove aromas with hints of vanilla. This full bodied, low bitterness beer is delicious and cream yet with a refreshing finish from high carbonation. Dunkel = dark, Weizen = Wheat.

Notes: Franconian-style smoked wheat beer rarely found outside of the Franconian region of Bavaria. Brewed with rauch pils malt and wheat, open fermented for maximum aroma and flavor, with beechwood smoke, clove, and banana aromas formed from our unique decoction mashing process.

VIENNA LAGER
Austrian Amber Lager || 4.5% || Willi Becher
Taste: Toast, Caramel, Pepper
Notes: Brewer and Vienna native Anton Dreher has been credited as the founder of the Vienna Lager style. He created what is now known as Vienna malt and used this in the Vienna beer. Austrian’s took this style of beer to Mexico in the late 19th century where it has greatly influenced their beers.

TAP ROOM:
Full pours for on-site consumption (1/4 liter, 1/2 liter and liters) and cans to go. Communal tables, counter and table service, it's a place to socialize with friends or meet new ones.
BIERGARTEN:
Open year-round (snow, sun, whatever), our 2000 sq ft Biergarten has a seating capacity of 250. Communal tables, heaters in the winter, umbrellas in the summer.
BREWERY:
We hope that our brewery will provide customers a way to see the unique brewing processes and equipment we use - a traditional decoction brew-house, open and closed fermentation, horizontal lagering tanks, German gravity cask dispensing, and a draft system imported from the Czech Republic – tools, process and equipment that will allow a wide variety of session beer (and occasionally non-session beer) to be produced.
