TENNER

Taste: Cacao, Toasted Dark Bread, Dry Finish
Notes: Cerne is Czech for “black”. This cold weather cult classic has toasty and slightly roasted malt character. Notes of dark chocolate and coffee make this beer perfect for a chilly evening. Double decocted, open fermented, naturally carbonated, lagered forever.

Pitch Lined Helles
Munich Lagerbier || 4.8% || Willi Becher
Taste: honey, biscuit, resin
Notes: Pitch is a combination of pine resin and paraffin, used to coat the inside of wooden beer barrels, and to protect the beer from the influence of wood. Pitch was once used by every lager brewery (even in the US) before metal tanks and kegs became the norm. Today, it is only used at a few breweries in Germany and the Czech Republic, and Notch was the first to re-introduce this process for lager production in North America after a long absence. We filled the barrels with Hexen Stadt, our Munich style Helles brewed in Salem, so taste for comparison. Also, we selected Helles for this round of the Pitch Line Project to showcase the impact of the pitch on the finished beer.
HELLES STADT
Munich Helles || 4.8% || Willi Becher
Taste: Bright, Honey, Subtle Sweetness
Notes: A classic style from Munich, and what the Bavarians created after the Czech’s discovered Pilsner. Less hoppy than the Pilsner, Helles is malt driven with cracker and white grape aromas and the flavor is clean and bright.
Fun Fact: Helles is German for light or bright. Stadt is German for town / city. Helles Stadt is loosely translated to Bighton (Bright town).
HEFE WEISSE
Bavarian Wheat Bier || 5.2% || Weisse Glass
Taste: Clove, Banana, Full-bodied
Notes: Classic Bavarian wheat beer and one of the most technically challenging beers we make. Open fermented for maximum aroma and flavor, with clove and banana aromas formed from the unique Bavarian yeast.

German Pils || 4.5% || Willi Becher
Taste: Crisp, Dry, Hoppy
Notes: Brewed with 100% Bavarian heirloom Pils malt, Perle, and Spalter Select hops and fermented with a classic bavarian yeast strain. German Afternoons has an upfront malt fullness that quickly leads to a pleasant drying balanced bitterness. The floral hop aroma comes from Notch's favorite German variety - Spalter Select. Named for the John Prine album, a German Afternoon is a spontaneous afternoon spent enjoying yourself, with a beer or two, instead of doing the errands or chores you "should" be doing.
ALTBIER
Dusseldorf-style Altbier || 4.5% || Willi Becher
Taste: Malt, Caramel, Toast
Notes: An ale fermented like a lager (long, slow, and cold) delivers a snappy bitterness with rounded notes of dark crusty bread and caramel. Sweet vanilla notes balance earthy bitterness, giving this beer a unique layered flavor.
VIENNA LAGER
Austrian Amber Lager || 4.5% || Willi Becher
Taste: Toast, Caramel, Pepper
Notes: Brewer and Vienna native Anton Dreher has been credited as the founder of the Vienna Lager style. He created what is now known as Vienna malt and used this in the Vienna beer. Austrian’s took this style of beer to Mexico in the late 19th century where it has greatly influenced their beers.

Munich-style Dark Lager || 5.2% || Willi Becher
Taste: Bread Crust, Caramel, Toast
Notes: Notes: Our Munich Dark Lager uses 100% Munich malt with a unique mashing process known as an enhanced double decoction. Notes of bread crust, caramel, and toast with an aroma of toasted dark bread from the Munich malt. Dunkel was the most widely consumed lager in Bavaria previous to pale lager taking over.

TAP ROOM:
Full pours for on-site consumption (1/4 liter, 1/2 liter and liters) and cans to go. Communal tables, counter and table service, it's a place to socialize with friends or meet new ones.
BIERGARTEN:
Open year-round (snow, sun, whatever), our 2000 sq ft Biergarten has a seating capacity of 250. Communal tables, easy access to our Notch Provisions food stall. Heaters in the winter, umbrellas in the summer.
BREWERY:
We hope that our brewery will provide customers a way to see the unique brewing processes and equipment we use - a traditional decoction brew-house, open and closed fermentation, horizontal lagering tanks, German gravity cask dispensing, and a draft system imported from the Czech Republic – tools, process and equipment that will allow a wide variety of session beer (and occasionally non-session beer) to be produced.
