CZECH PIVO

THE STANDARD

Czech Pale Lager || 4.4% || Czech Mug || 12° P
Taste: Lemon, Malty Sweetness, Bread
Notes: Classic Czech pale lager, brewed with floor-malted Pils malt and Sterling hops. Double decoction, open fermentation, and extended lagering time bring a bit of Plzen to Brighton and Salem.

THE VALLEY

Czech Pale Lager || 4.6% || Czech Mug || 12° P
Taste: Honey, Biscuit, Pepper
Notes: We used the recipe and process of the Standard, and substituted the Czech base malt in the Standard to Valley Malt from Holyoke MA. As this beer displays, local malt can certainly compete with the classics from Europe.

POLOTMAVÝ

Czech Amber Lager || 4.2% || Czech Mug || 11° P
Taste: Toast, Caramel, bread
Notes: Polotmavy is Czech for “half-dark,” this 11° Plato Czech Amber Lager is brewed with Czech floor malted pils Vienna and Munich malts for notes of toast, caramel and bread. Czech Sladek hops balance out the malt and provide a spicy finish. This beer also undergoes a unique mashing schedule known as an enhanced double decoction for a more complex malt flavor. Open fermented, naturally carbonated, lagered forever.

cERNÉ PIVO

Czech Black Lager || 4.5% || Czech Mug || 12° P
Taste: Cacao, Toasted Dark Bread, Dry Finish
Notes: Cerne is Czech for “black”. This cold weather cult classic has toasty and slightly roasted malt character. Notes of dark chocolate and coffee make this beer perfect for a chilly evening. Double decocted, open fermented, naturally carbonated, lagered forever. 

GERMAN & austrian BIER

⁣LOGGERHEAD DOPPELBOCK

Dunkel Bock || 7.5% || 14oz Willi Becher
Taste: Toffee, Brown Sugar, Herbal
Notes: Enhanced double decoction, open fermented, naturally carbonated, and conditioned in horizontal lagering tanks forever. A dark malty strong lager with layers of complexity and nuance. Take your time with this one.

KÖLSCH

Cologne-style Kölsch || 4.5% || Willi Becher
Taste: Bread, Fruit, Biscuit
Notes: Medium in body with a soft mouthfeel and a straw yellow or pale gold color, Kölsch has a spicy, herbal Noble hop bitterness that is medium to slightly assertive—less than a Pilsner, but not by much. A somewhat fruity or vinous (grape-y from malts) quality and a crisp, dryish finish make up the rest of the flavor profile.

Order it by the Kranz (Kölsch tray), the equivalent of 2 liters of beer in 10 stangen (Kölsch glasses) $30

KELLERBIER

Franconian Pale Lager  ||  4.9%  || Willi Becher
Taste: Malty, Herbal, Pepper
Notes: Kellebier, Zwickel, Ungespundet and Landbier are often used interchangeably in Bavaria, and the designation is usually determined by region or the brewer's whim. But these beers share similar traits in that they are not filtered (or fined),which results in a slight haze, and they are mostly served on draft. Our Kellerbier is a pale version with a slightly higher ABV than our Zwickelbier, and carries a bigger, firmer maltiness.

Franconian Amber Kellerbier || 4.5% || Willi Becher
Taste: Malty, Toasty, Soft Carbonation
Notes: Named after the fermentation process that regulates the amount of natural carbonation, this beer is malt forward, toasty in aroma and most importantly, incredibly drinkable. Ungespundet = Unbunged

STICKE ALTBIER

Strong Dusseldorf-style Altbier || 6.5% || Willi Becher
Taste: Malty, Caramel, Toast
Notes: Sticke Bier is a name given to a strong dry-hopped version of the top-fermented Dusseldorf-style Altbier, generally described as being higher in alcohol and more assertive in character than the traditional version.

DUNKEL BIER

Munich-style Dark Lager || 5.2% || Willi Becher
Taste: Bread Crust, Caramel, Toast
Notes: Our Munich Dark Lager uses 100% Munich malt with a unique mashing process known as an enhanced double decoction. Notes of bread crust,
caramel, and toast with an aroma of toasted dark bread from the Munich malt. Dunkel was the most widely consumed lager in Bavaria previous to pale lager taking over.

THE BLACK LODGE

Dunkel Rauchbier  || 4.5% || Willi Becher
Taste: Beechwood Smoke, Malt, Toffee
Notes: A traditional smoked lager modeled after the smoked beers of Bamberg using rauch (smoked) malt. Beechwood smoke is used to dry the barley during malting, resulting in a smoky aroma and hint of smoke in the flavor. Single decocted, spunded and lagered forever. The Black Lodge is the perfect balance between the malt and smoke with medium hop bitterness and a clean lager fermentation character. ⁣

POLISH PIWO

POLSKI BALTIC PORTER

Polish Porter || 7.2% || 14oz Willi Becher
Taste: Roasted, dates, toffee
Notes: Often called the Polish Brewing Treasure, this style was created in the 19th century as a continental version of the famous British porters. Brewed with Munich, Pilsner and dark roasted specialty malt to create a deep, malty flavor with a noticeable roastiness with flavors of licorice and toffee.

Taste: Caramel Nuts, Bisquit, Toasted Malt
Notes: A rarely found style originating from Nuremberg in Franconia. The red color comes from the unique Francoinian malt, as well as an extended decoction and wort boiling. Double decocted, naturally carbonated, and conditioned in horizontal lagering tanks for two months.

Helles Rauchbier || 4.5% || Willi Becher
Taste: Bright, Clean, Subtle Smokiness
Notes: Rauchbier is the same recipe as our Helles Lagerbier but the grain bill includes Bamberg Rauchmalt, barley malt that has been dried with Beechwood smoke.

Cream Ale || 4.2% || Czech Mug
Taste: Sweet Malt, Honey Dew Melon, Pepper
Notes: The style has many interpretations, and few brewers can agree to all the ingredient and process variables. Also, the word "cream" itself is descriptive, and not based on ingredients or process. However, we can all agree it's a mashup of lager and ale, showcasing the best of both worlds

Altar - 16oz 4-packs

Dark Altbier || 4.5% || Willi Becher
Notes: Our collaboration brew with Die With Your Boots On this year is a dark altbier. Just like our classic alt, but with a little more roasty and dark color from the addition of extra roasted malts to fit the BWYBO desire.

TAP ROOM:

Full pours for on-site consumption (1/4 liter, 1/2 liter and liters) and cans to go. Communal tables, counter and table service, it's a place to socialize with friends or meet new ones. 

BIERGARTEN:

Open year-round (snow, sun, whatever), our 2000 sq ft Biergarten has a seating capacity of 250. Communal tables, easy access to our Notch Provisions food stall. Heaters in the winter, umbrellas in the summer.

BREWERY:

We hope that our brewery will provide customers a way to see the unique brewing processes and equipment we use - a traditional decoction brew-house, open and closed fermentation, horizontal lagering tanks, German gravity cask dispensing, and a draft system imported from the Czech Republic – tools, process and equipment that will allow a wide variety of session beer (and occasionally non-session beer) to be produced.
